It was REALLY yummy! But it made 24 and I have so many leftover! Seriously, I'm going to try and have to give them away today. I didn't make the homemade caramel in the recipe--Trader Joe's has a really yummy caramel sauce that I used instead.

Hmmm, as far as the wild rice goes, maybe brown rice would work since it's got some texture to it? I can't imagine that the wild rice adds a lot to the actual flavor but it does have a nice texture.

Tried a new recipe tonight. Gluten free pizza bites. I used this recipe: http://knowgluten.me/2013/10/30/glut...tapioca-flour/ I don't have a mini muffin pan so I just made them in a regular sized pan, so they were bigger than bite size. Served with spinach salad.

Then this happened last night



Back story. Every single year, in October, the kids request that we make caramel apples (of course.... they see such huge delicious fancy varieties of them regularly for sale this time of year ). Every single year I have the best intentions. We always have delicious apples on hand (and this year have a good load of honeycrisp, which are our faves) and I think every October I buy caramels with caramel apple making in mind. Follow through is most definitely not my strong suit.

But this year I actually made it happen! So it's a proud mama moment for me.

Over the weekend we had shepherd's pie (now that we have discovered how wonderful it is with lamb, we will never go back to ground beef!) and then cinnamon apple grilled cheese (muenster + cream cheese/cinnamon/powdered sugar + pecans/honey + fried apples on cinnamon swirl bread ). I was going to make zucchini lasagna tonight but we have a lot of leftovers so we'll prob do that tomorrow.
