Food Day Challenge from UC Davis
A friend posted this and we're going to do it too. Anyone else want to see? It's basically three weeks of recipes and shopping list for a low sugar, plant-based diet.

Re: Food Day Challenge from UC Davis
looks intriguing! It's not very far off from where I currently eat, but I do notice a few changes. Specifically the no oil. We do use coconut and olive.
I joined! I'm in for trying it out.

Re: Food Day Challenge from UC Davis
I was looking at it deeper last night, and there are many components that I can't do. I do do a whole foods eating plan (LOTS and LOTS of fresh fruits, vegetables) and I do a lot of meat for protein (but definitely not committed to meat if I supplement enough protein otherwise), but do not do flours or starches, which I see the menu plans calls a lot for.
So I may have to be half in? Is that allowed for the sake of this thread? As in, there looks to be lots of fantastic ideas and recipes and I'd love to follow along but wont' be able to actually follow it precisely but there does seem to be some great tips and recipes and ideas that I could absolutely implement.

Re: Food Day Challenge from UC Davis
That's about what we are doing. Like, I can't do avocado but the rest of the family can, you know?

Re: Food Day Challenge from UC Davis
Does anyone else find nutrition maddening? Just read the Heal Tooth Decay book and he says to avoid much of this food and eat the other stuff. Gah!
I would love to eat more veggies though, so I'm going to check it out more.

Re: Food Day Challenge from UC Davis
It is incredibly overwhelming to read a variety of very reputable nutritionists say sometimes completely opposite and contradictory things.
I just take it to mean that there is no perfect answer that will apply to everyone. Apart from the basic common sense of eating more food in the forms that God created it (whole foods), many of the other things are mostly a matter of trial and error and figuring out what works best for you. That's one of the reasons why I like looking at things like this. Even though at first glance I can see that it's not something that I can follow perfectly for what I've determined works best for me, there are definitely some ideas I can take from it. I am 5.5 years in to my healthy eating transformation/dramatic weight loss/weight and health maintenance mode so I actually feel that I have a very strong handle on what works for me, but even then, there are always new things I learn and new tweaks and modifications I can make to what I'm doing.

I've been eating high fat/high protein/lots of veggies, and my A1C is close to pre-diabetic. 50 answers on how to get that down, I'm sure. But more veggies will help for sure!!

Re: Food Day Challenge from UC Davis
Llee, the challenge started today. What are you eating/doing as a part of it?

Surviving sickness. I have potato soup (with veggie broth I made!) in my Instant Pot.

Re: Food Day Challenge from UC Davis
One thing I already gleaned from this challenge are some of the oil-free salad dressing recipes. I'm not convinced that oil free is the best choice for me, BUT I do like the option of not using oil in dressings when I want to. So far I have tried two of the recipes. The garlic dijon and the greek. Both with chopped cabbage salad. I liked them!
