Tonight I threw together from what I had on hand. Ended with a roasted chicken breast, onion, garlic, mushrooms, brussel sprouts, carrots dish. After roasting I tossed it with some homemade basil pesto and served over zucchini noodles
And then steamed carrots in butter and parmesan and gf mini pizzas.

Tonight was pasta for 10 of our friends. It was good.
Now I need to plan for next week. Dh will be gone one meal for small group and then extra kids over the weekend.

Leftover tuna, rice, dill relish, and butter. My other meal today was grilled cheese that I cooked in the drippings from a burger with added butter.

Last night was cashew chicken lettuce wraps for the kids. Dh & I went out for our anniversary.
Tonight was peanut butter chicken noodles with cucumbers.

I'm trying that Autumn Chicken Sheet Pan recipe someone posted upthread. It looked so good and super easy. I'll let you know . . .
I'm working every night this week, so we've got crock pot or heat and eat on the menu for every night. Oh, except for last night which was easy peasy nachos - I chop a gob of veggies, season some ground meat, and put it all on the table with salsa and a bag of chips.

I made a recipe from Molly Gilbert's Sheet Pan Suppers: curried chicken with cauliflower, apricots, and olives (but I used shallots not olives). It was very good and I had an eye opening moment about how I can fit dinner for my family of 5 on one sheet pan...you lay the boneless, skinless chicken thighs right on top of the layer of veggies! Everything cooked really well.
