Vegetarian recipe for a guest
Most of our meals have meat in them. DD's youth leader is a vegetarian, and is coming over on Sunday to help us decorate for Christmas and I'm trying to come up with a menu. DD texted her and asked if there was anything she doesn't like and she said she really likes most things. She asked her if there was anything she was wanting, and she said maybe pasta. I really want to make Fettuccine with Roasted Butternut Squash, Brown Butter & Sage. I've made it before (and don't like trying new things on guests) and I think it's really yummy. DD thinks I should make something more "normal", but doesn't have any suggestions for me. What do you think....is this safe enough for a guest?

That looks really amazing! If you're not sure if it would be great, you could always make a bunch of pasta and then make that AND marinara sauce, serve with a salad and garlic bread and you're good to go.
Other things that are good for guests- vegetarian chili, baked potato bar, creamy potato soup (in bread bowls if you're feeling fancy, with bread on the side if you're not), lasagna, burritos/tacos.

That's very normal, IMO. Since you're roasting the butternut squash, I suggest roasting a pan of mixed vegetables as a side dish.

How old (approx) is the guest? Are we talking middle aged adult or young person?
My teens would totally call something like that "not normal" and be on your dd's bandwagon. It is also something that we, as a family, would most definitely eat. And I would not hesitate for a second to serve it to guests, especially adults who appreciate good food. I may hesitate were it a younger person just because younger people have less tolerance for good food imo. But when you say "youth leader" I'm assuming it's someone who is older than youth age. I'd probably serve a salad alongside it. That gives lots of options.

Oh! With that information I'd definitely go with that recipe. Anyone who loves sushi is a fan of good food.
I wouldn't let dd's response deter you. In the same way I wouldn't let my teens response, which would be the same, deter me.

thank you very much for this. I am nearly vegetarian... nearly because of my arthritis I am not eating almost no meat at all so lately I have only vegetarian food. but this is not enough to fully deal with the pain so i also take bupap, but I'm much better now whichever the case. thanks for this!
