What do you have, CC?

All my muffin pans are Teflon. I really want a plug-in griddle type thing, but those always seem to be Teflon.

All our regular use pans are cast iron. I didn't like stainless steel when I used it at all.

Really? What do you hate about it? I wonder if there are differences in brand & stuff? I don't actually know what any of mine are, except that I got the muffin cups at Target. And I think the egg poaching cups are the only ones out there. I also have some heart-shaped muffins pans that were new with tags on at the thrift store, but I don't remember the brand.

We have one cast iron pan, stainless steel pots, a ceramic enamel dutch oven, and then pyrex or stoneware for baking.

I hate that they are floppy, and they do Not release muffins at all, and bread only if it's greased well first. I hate that i have to put them on a cookie sheet to be of any use, and my bread comes out blob shaped bc the pan doesn't hold shape.

There is "encapsulated alluminum" which means the alluminum is completely covered by the stainless steel, so that the food does not touch it. Stainless steel alone is said to not conduct heat well, so there can be hot spots where your food will burn. But, there still are alluminum pans made - and they look just like stainless steel, so we have to be careful in shopping.

Yes. In my stainless steel the aluminum is inside the layers of ss, as a conductor. It does not come in contact with the food in any way.

One thing when picking out ss pans - beveled edges! Makes it so much easier to pour from pan to bowl, etc. My favorite feature of the cuisinart pans I bought!

Do the green pans really work?
We use cast iron, stainless and glass/ceramic right now but I cannot for the life of me make eggs the way I like them in a cast iron pan. I need a non-stick omlet pan.

Yes. But you have to take good care of them. Make sure no metal utensils. Wash as soon as they cool. Leaving food residue sitting on them breaks down the coating faster. I've had mine for over a year and still going strong. They are pretty reasonably priced too. I mostly use them for scrambled eggs and omelettes.

What a bummer! I would hate that, too! Mine are not too floppy. My heart-shaped muffin pan turns out heart-shaped muffins that do not stick, and I don't have to set the pan on a baking sheet. I wonder if it's a thicker silicone? I *do* have individual muffin cups that I set on a baking sheet. And my egg poaching cups stick when I try to do 2 in a row without washing in between.

About stainless: the issue with other metals possibly leaching into the food does not have to do with the aluminum or copper core; it's that stainless steel is usually an alloy, not pure stainless steel (like surgical steel), and the alloy usually contains chromium and/or nickel. You want to research the numbers that are stamped on stainless items and know something about grades of stainless steel. (Again, wish I could find my links. They took me forever to find last time.)

Inspired by this thread, I replaced my floppy dumb silicone bread baking pan with two pyrex bread pans why did I put up with the silicone one for a decade knowing I hated it? Why I ask you.
