Last night we had Salisbury Steak Meatballs with mushroom gravy over mashed potatoes, and the quick sauteed zucchini with almonds and parmesan from another dinner thread.
Tonight we had mozzarella chicken with a balsamic tomato sauce over rice with roasted honey glazed carrots and arugula and spinach salad. Tomorrow will be Crockpot Zuppa Toscana.

Laurlor, you strike me as a person with awesome cooking abilities. I think you may be selling yourself a little short. I can't leave a recipe alone. I almost always have to put my spin on it.

You're very sweet, but I truly never veer from recipes! I would say I've only really learned to embrace cooking in the last 4-5 years, so I'm still learning. Maybe when I'm a more seasoned cook I'll be more confident! Cooking wasn't enjoyable for me when my kids were little, but now that they've grown I have this vision of wanting them to have great memories of family dinners and WANTING to come home so I've learned to really love it now! I love Sally Clarkson's ideas about feasting and discipleship being done through "The Table."

I have confidence, but I'd love to get a greater variety of winning meals in my kitchen, and for me that means trying new recipes. Somehow it feels daunting, but I when I do it I'm glad. I always intend to try more of the links in this thread.

Last night was pork chops cooked on the indoor grill, seasoned with GF soy sauce, onion powder, garlic powder, and ginger. Japanese blend veggies on the side.
