Go with the instant pot. Most other electric pressure cookers have a non stick bowl and that will just end up scratched.
What I'm doing this year is to make a few days worth of meals at a time and keep them in Pyrex in the fridge. So many people are coming and going on different schedules at our house and some people need to take multiple meals with them so I'm thinking this might be easiest for us. |

Amazon had an ip for $79 the other day but I missed it. Target has it now for $99 and they give you a $10 Target card. Worth it? Or wait for another amazon deal?

Worth it, yes. BUT I'd still wait for a better price. I've seen it drop down to that Amazon price a few times. It seems to do it more often now that it's an older model.

I made chicken soup with rice in it. I need to make a plan for next week Tuesday is super crazy the girls and I will be gone from 7 untill 6:40. Dh can toss stuff in and start it but I need to figure out what.

None of us like the soupy/watery texture of recipes from a crock pot. We much prefer the IP.
I've done dry beans in the IP. They turn out great if they're soaked first. Trying to cook from dry isn't so great. Jasmine rice-- rinse well, put equal parts rice and water into IP (this is for rinsed rice). High pressure for 8 minutes. Perfection. |

Are you open to some other fast weeknight dinners that are not crock pot/IP?
If so, I can share a few things that seem to be working well there at the moment (I say at the moment because I feel like stuff is always changing!) We have many, many nights that we are gone during the normal dinner prep time and need to eat ASAP after we get home.

I prep everything for a sheet pan dinner, put it in Ziploc bags, then put them in the oven when we get home. That's if we'll be home in time for them to bake.
I always make double whenever I make a casserole. I refrigerate the other to have on the next busy day. I sometimes make a huge lot of soup on a slow day. Then all I need is bread and to reheat the soup for a meal. |
