I need delicious ways to prepare beans and rice, slow cooker ideas welcome too. I need to save more money on food month to month. I know this can be a lovely, healthy alternative to bigger prep meals but I don't know where to start.

How do you make beans and rice?

This is super simple. Cook up some rice (we use brown). About half way through cooking, add a can of drained, rinsed black beans (or soak/cook your own). I also add a small can of diced green chili peppers, then lots of "taco" type seasoning (a mix of salt, pepper, chili powder, garlic, onion, oragano, and cumin).

We serve with corn chips to scoop it up, topped with your choice of: cheese, lettuce, tomato, salsa, black olives, sour cream.

Mix: cooked brown rice, cooked & drained beans (black, pinto, whatever), salsa & sprinkle with shredded cheddar.

Can also add corn, olives, diced bell pepper, zucchini, & top with cilantro, avocado slices and sour cream.

Ooh, ooh, I just made a really yummy one last night! I'll come back in the morning when I can take a peek at the recipe. It had acorn squash in it and was really yummy (and only ~3.50 for 6+ servings plus leftovers for lunch!).

I like to sauté onions and beans in olive oil then add cooked rice. I'm sure I add some seasonings like salt, pepper and maybe garlic, parsley, chives...whatever looks good.

Also, this is my favorite rice recipe ever and you don't need to add anything to it if you don't want. You can eat it as the main dish by itself, add some left over meat and veggies for a "stir fry" type dish. I'm sure it's lovely with beans, I just have never done it. Oh, I also make lentil taco "meat" by boiling the lentils with the taco seasoning. It only takes 15-20 minutes and even my picky kids like it.

Yes lentil tacos are wonderful!!!

Okay, here's what I made the other day that came out well:

1 c. chopped celery
1 c. chopped onion
1 c. chopped bell pepper
1 clove garlic, finely chopped
1 tbsp oil
1.5 c. uncooked brown rice
2 c. peeled, cubed, cooked acorn squash
5-6 c. chicken stock
1 tbsp. fresh chopped (1 tsp. dry) thyme
2 tsp. fresh chopped (1/2 tsp. dry) oregano
1/2 tsp. salt
1/2 tsp. pepper
1/2 tsp. red pepper sauce (I didn't have this so I added 1-2 tsp. sweet chili sauce. It kind of sounded the same )
2 c. cooked beans (you can use any kind, really. I used pinto.)

Heat oven to 375. Grease 9x13 pan. Saute celery, onion, bell pepper, and garlic in oil in a large skillet until slightly tender. Stir in rice. Cook 3 min. stirring frequently until rice is coated in oil (you might want to add another drizzle of oil if you're having a hard time coating the rice). Stir in remaining ingredients; spoon into casserole dish. Cover (even just with foil), and bake about 50 min. until rice is tender and liquid is absorbed. Serves 6-8.

The acorn squash was really nice in it; it gave it a creamy kind of texture that was almost reminiscent of cheesy texture (or maybe I've been cooking df for too long ), and the whole thing had a nice flavor. If you're going to play with the spices go easy on the oregano and heavy on the thyme. Maybe some chili powder or cumin would be good as well!
