Homemade macaroni and cheese with chicken and tomatoes, broccoli on the side. Actually, it's half macaroni and half rotini

Greek chicken and potatoes with salad (greens, snap peas, cherry tomatoes, cucumbers, red onion, basil, and sunflower seeds). My SIL is visiting and she's dairy-free/soy-free, and this is one of my favorite meals anyway, so it worked out great.

How do you do the chicken part of the Greek potatoes? This sounds really, really good.

I use the same marinade (the olive oil, lemon juice, garlic, oregano, salt, mustard) for both the chicken and the potatoes. I usually make a Greek salad too (no greens, peas, or seeds; add feta cheese and Greek salad dressing) but then it wouldn't have been dairy-free.

It's super overcast and cold today, so we're having baked potato/cauliflower soup and herbed cheddar biscuits.

DD is making homemade pizza. I'm trying to decide on a low carb crust alternative for myself. Dh and I will also have green salads.

Oh all the pictures of macaroni and cheese. That is the one thing that I really really miss about being dairy free. I have other things I can do, but they aren't the same.
