Share your cornbread recipe with me.

YEARS ago we went to the Museum of Appalachia and had amazing cornbread. I can't remember how it was made, though. I'm looking for a good, dense cornbread...not corn cake.

I never use a recipe, but I usually mix 3 parts white cornmeal to 1 part flour, add an egg and a little salt/pepper and enough milk to get the consistency I want. Then cover the bottom of a cast iron pan with about 1/4 inch deep in oil. Heat it on the top of the stove. After it is good and hot, pour off the oil into the batter and mix it in well.

Then pour the batter into the hot pan and bake in the oven at about 400 degrees until golden on top.
