Flax pancakes
I got a request for the recipe. So, here is my rendition!
3 cups flour (I use whole wheat. You don't even have to use Pastry flour. It works wonderful with whole wheat.) almost a 1/2 cup ground flax or 6 tablespoons (Buy the flax in bulk and grind in a clean coffee grinder or blender. Store this in a mason jar in the fridge.) 6 teaspoons baking powder almost a 1/2 teaspoon salt (I tripled the original recipe, so for salt it's 3 times 1/8 teaspoon. Does that make sense?) 3 cups water (The original calls for non-dairy milk. I use water and it works fine. Soymilk does tend to make them a bit fluffier.) 3 tablespoons oil (I use light olive.) I mix up the dry stuff and cover it and leave it on the counter overnight. That way it's all ready to go for the morning. Then you add the wet stuff and mix gently with a spatula. You have to let it sit for 5 minutes before using. The flax will make it get thicker and thicker. So, you may have to add more water/milk to the mix as you go. I usually mix it up and jump in the shower. I use a non-stick griddle and don't have to use any oil. We love these pancakes. I have added leftover cooked oatmeal and extra water and it works really well. So, add whatever you like to this it's awesome. Just don't forget the batter gets thicker. This makes enough pancakes for the 5 of us people and I make sure that Monty gets a couple for a special breakfast, too.

Ok, they are cooking now. . . they are very easy to make.
I use freshly-ground (whole wheat) flour, and it seemed really thick with only 1 cup of water. So I kept adding water and milk (I used a mixture) until it looked right. I ended up with about 3 cups of liquid. I have RVC, so I checked the recipe. . . you forgot to triple the liquid. Hey, I'm glad I trusted my instincts! They look great. . . so does the banana-blueberry smoothie waiting in the fridge. The girls are thrilled. We're serving hard-boiled eggs with our vegan flaxjacks! I don't eat them, but DH and DDs do. |

Our official report: They are fabulous and they are all gone! Our DDs (7 & 4) ate as much as DH & I. It was the perfect amount. I'm actually going to mix up another batch (just the dry ingredients). . . or two or three. . . and store it in the freezer. Then we'll just have to add the milk/water and oil. bumping! I wanted to say you really need to use WW flour. AP flour just does not work well in this recipe. I use Almond or coconut milk with them and they come out really nice.
