Shortening Substitution - Help!
My mom gave me a recipe to make oatmeal cookies. I have all the ingredients except shortening. What can I substitute? I am thinking about doing butter 1:1 and adding maybe 1/2 cup of applesauce. Will that work? I know the cookies will be a little more crisp than chewy with the butter sub.

I think that just using butter or margarine as a substitution would be enough without the applesauce. You could use applesauce to substitute for some of the shortening, but you don't want to use applesauce as well as the entire amount of butter/shortening.
Whatever you choose to use, there will be texture differences. If it was me, I'd use just the butter because it will be yummy!
