dh is tired of curried lentils and I'm tired of lentil soup . . . any other suggestions?

I do this but I use less liquid so its not soup, more of a mush. I don't use the chili powder and I have left out or added things based on preferance and what I have on hand.

Lentil Enchiladas are amazing.

Use this recipe for the lentil base, then roll in tortillas & top with 1.5 cups (or 1 can) enchilada sauce. Sprinkle with cheese and bake at 350 for 30 mins or until bubbly.

ETA: I double the lentil recipe & freeze 1 portion. Once thawed, it's super fast to throw the enchiladas together. You could also assemble the enchiladas, then freeze, but I've never done that.

Sloppy Joes made with lentils instead of meat!

You can also make lentil loaf (instead of meatloaf), or mash cooked lentils and add to your meat for meatloaf to stretch it.

I use them with bulgur and kidney beans in veggie chili. Or I prepare them with smoked sausage (the sausage imparts a wonderful flavour to the lentils).

Oh! Speaking of lentil "meat" loaf, here is a loaf generator I found on a vegan site. Choose lentil as your "protein" and then pick out other ingredients you have on hand! Yum they always turn out so good

I always loved the loafs I made, and I usually use chick peas or lentils as my protein. Vegan lunch box is also a cute blog I haven't read in awhile. I have the cookbook for when DD is older... cute kid-friendly creative lunch ideas
