Default Want a new chicken recipe?

About 20 years ago my mom wrote a chicken cookbook that she thought might be world famous

It's called, and I'm serious...Ummmmm Good! "Chicken." with quotation marks

Anyway I thought it might be fun to post a recipe for everyone who posts in the thread. Maybe you've heard of it before, maybe not! Who wants to play?

For Loralee

Potato Chipped Chicken Casserole
1 onion (chopped)
4 C chopped cooked chicken
4 C celery (chopped)
1.5 C mayo
3 T. lemon juice

Mix all together--put in 9x12 baking dish. Add 2 C shredded cheddar cheese, 4 C crushed potato chips, and 1 C sliced almonds. Bake at 350 for 25-30 minutes.

Enchiladas Aztecas

2 T butter
2 T flour
1 C milk
3 C monterey jack cheese, shredded
2 C chopped cooked chicken
1/2 C avocado
1/3 C chopped tomato
1/3 C olives, sliced
1/4 C chopped green chilis
1/4 C chopped onion
12 tortillas

Make a white sauce with butter, flour, and milk. Add 2 C cheese and stir until melted. Add chicken, avocado, tomato, oilves, chilis and onion. Mix well. Place about 1/3 C chicken mixture in each tortilla, roll up tightly. Place seam side down in 11x7 inch baking dish. Top with remaining cheese and bake at 350 for 25-35 min.

Serves 6-8

I totally pulled the most obnoxious non-veggie convertible recipe I could out of the hat

Chicken Divan (also can use with turkey, April)
2 T butter
2T flour
1 1/4 C milk
1 egg yolk, beaten

1/4 c grated cheddar cheese
2 pkgs frozen broccoli cooked and drained (no wonder I hate veggies...sigh)
3 C sliced cooked chicken

Melt butter, add flour and cook until mixture bubbles. Remove from heat. Graduatlly stir in milk and egg yolk, then add spices. Cook, stirring until mixture is thickened and starts to boil. Add cheese and cook, stirring until cheese is melted. Arrange hot broccoli and chicken in baking dish, spooning sauce between layers and on top. Sprinkle with Parmesan cheese. Broil until cheese is browned.

I'll take a recipe that is allergen-free (no corn, soy, wheat, eggs, dairy, nuts, etc.), made from scratch, is super-easy and my husband won't say that it's "boring."

Oh, and no pepper - forgot about that one.
