I roasted cauliflower and broccoli and made wild rice. Added those to leftover chicken and sweet potato. I needed something simple tonight.

I'm really struggling with meal planning right now. 4 nights a week I am out and different configurations of kids & parents are home. So hard to plan around that. One night a week I don't knownif I will be home or not. I'm planning 2 days at a time. Its all I can do.

Last night we had roasted salmon with tzatziki, rice, asparagus, and marinated Greek salad. Tonight I'm going to try this new recipe: Slow Cooker Chicken and Mushrooms, crockpot mashed potatoes, beets, kale caesar salad.
