Lamb stew with apricots. I found a small package of lamb stew meat when cleaning out the deep freeze. It won't make much should suffice for a decent dinner. Sweet potatoes and some sort of red cabbage salad/slaw. And planning a trip to the store!

Early bird picked so we had meat loaf and roasted baby brushel sprouts with pomigranet bisalmic vinegar.
I hate doing meat loaf it is so expensive and hard to steach it over many meals.

I roasted 2 spaghetti squash last night, while making supper, and shredded them, and let them drain in the fridge overnight. Tonight, I mixed with wilted, chopped spinach, diced bacon, garlic, and parmesan cheese. Baked, and did roasted broccoli.

Tried a new recipe tonight because I had some leftover shredded chicken to use up. Creamy chicken taco pie. http://www.garnishandglaze.com/2014/...cken-taco-pie/ I used corn tortillas so it was gluten free. And everyone loved it! So good news!

Kids were at church for dinner tonight so Dh and I had steak, loaded baked potatoes a broccoli (cooked for me, raw for him).

Beautiful weather here yesterday. A last gasp in Michigan... So I took full advantage of it and grilled.
BBQ chicken, grilled sweet peppers and onions. Roasted carrots. Served over zucchini noodles. An additional side of mac and cheese for the kids.

Ended up working about 12 hrs today, missed dinner with the family. Made a chef salad for dinner that it the spot (I wasn't really hungry but knew I needed to eat). It was almost 10 pm by the time I got home (ran a couple errands on my way into town).

Cilantro lime shrimp w coconut rice, spring mix w/balsamic vinaigrette.
This was a true 20 minute dinner. Last night was spaghetti and meatballs for the kids, and leftovers from Thursday for me. Thursday was Thai red curried butternut squash and cauliflower over quinoa. Sounds odd, but it is yummy.

Not sure how good or. Ad this looks to you but it tasted ok. It was what I could make from what we had. So I roasted sweet potato and cauliflower florets in the oven, cooked pork sausages, tossed them with spaghetti and baby spinach leaves, and threw in a bit of olive oil and balsamic vinegar. Surprisingly it was a pretty ok dinner. Sent from my iPad using Tapatalk
