Kids were at church for dinner tonight so Dh and I had steak, loaded baked potatoes a broccoli (cooked for me, raw for him).

Beautiful weather here yesterday. A last gasp in Michigan... So I took full advantage of it and grilled.
BBQ chicken, grilled sweet peppers and onions. Roasted carrots. Served over zucchini noodles. An additional side of mac and cheese for the kids.

Ended up working about 12 hrs today, missed dinner with the family. Made a chef salad for dinner that it the spot (I wasn't really hungry but knew I needed to eat). It was almost 10 pm by the time I got home (ran a couple errands on my way into town).

Cilantro lime shrimp w coconut rice, spring mix w/balsamic vinaigrette.
This was a true 20 minute dinner. Last night was spaghetti and meatballs for the kids, and leftovers from Thursday for me. Thursday was Thai red curried butternut squash and cauliflower over quinoa. Sounds odd, but it is yummy.

October Dinners
Not sure how good or. Ad this looks to you but it tasted ok. It was what I could make from what we had. So I roasted sweet potato and cauliflower florets in the oven, cooked pork sausages, tossed them with spaghetti and baby spinach leaves, and threw in a bit of olive oil and balsamic vinegar. Surprisingly it was a pretty ok dinner. Sent from my iPad using Tapatalk

Thanks! I'm getting better at it but dh is better than me at that. Tonight he made an amazing chicken curry from scratch. Welcome back old friend. A curry we haven't seen in a while.

I keep forgetting to take pictures! It's a habit thing. I obsessively take pictures of my food then one day forget and it's all downhill from there....
Tonight's dinner was a sort of mexican baked casserole. Did ground beef, seasonings, added mixed veggies and rice. Topped with cheese and baked. Served with salad. Chocolate chip zucchini cake for dessert.

We're celebrating my mom's birthday tonight and she requested a Chicken Thai Pasta I make. I'm serving it with chicken cilantro wontons and asian cabbage salad. I made a flourless chocolate cake my mom requested.

Tomato pie leftovers tonight Last one of the season. I made it Saturday--DH rolled out the crust for me :melt --and so there are four slices left, perfect for dinner again tonight. Last one of the season.
