Baked Salmon with Creamy Dill Sauce, baked sweet potatoes, cauliflower, spinach (maybe salad or lightly sauteed, not sure yet).

I'm also apparently on a roll with the strawberry salad thing.

Kids love it and strawberries are on sale this week so I went with it!

Tonight's dinner was BBQ spareribs, roasted broccoli and cauliflower, baked potato. Strawberry/feta spinach salad.

We're having butternut squash ravioli with a browned butter and sage sauce, served with roasted asparagus and baked bread rolls.

We had Navy Bean, Bacon and Spinach Soup with cheesy breadsticks. I've been making more and more recipes from Skinnytaste.com and am always so pleased with the results. Super yummy AND healthy!

That looks really good and easy! I have her cookbook from the library, and I just saw she has a new one out (so I requested that too). Now I need to try a few of her recipes from this thread!

Another Skinnytaste.com recipe: Beef, Tomato and Acini di Pepe Soup. It smells great and I think I'll love it, but I wish I would have blended the veggies after cooking awhile and before adding the beef because it's pretty chunky and DS is going to complain.

I was hoping for soup tonight, but it was so hot outside today, I couldn't bear it.
So, we had a last minute thrown together rice, curried chick peas w/ spinach. I also roasted broccoli that I had to cook before it went bad.

I am really hoping it cools down again soon!

That sounds so good, LilacPhoenix! I love both those things, but my family does not, so I never make those. So comforting, though.

I am madly in love with my immersion blender. It's CRAZY the amount of things I can throw in a soup and blend and the kids remain absolutely clueless about the amazing things that they are unknowingly eating.

Tonight we had chili. I had another batch of my garden heirloom tomatoes ripen so I wanted to make use of them.

Look at my picture a few posts up and you'll get the gist of tonight's dinner.

Though replace the strawberry feta salad with a veggie salad and you've got accuracy.

I made up a risotto with grass fed ground beef, tomatoes, mushrooms, peppers, zucchini, spinach, and parmesan using up stuff in my fridge.
