February Dinners
Please share what you are eating for your main meal each day. Links to recipes and pics welcome.
We had oven roasted sausage, sauerkraut, fingerling potatoes, and broccoli with pan sauteed cinnamon apples.

We had Super Bowl leftovers-- fruit, buffalo chicken dip, veggies and ranch, etc.

Last night was broccoli beef in the IP. I had cauli-rice and the famy had white rice.

Last night we had Chicken and White Bean Enchiladas with Creamy Green Chile Sauce and a southwest salad.
Tonight we're having guests....I'm making Grilled Lime Salmon with Avocado-Mango Salsa and Coconut Rice and Mango, avocado and arugula salad. Our favorite Sour Cream-Chocolate Cake with Peanut Butter Frosting & Chocolate-Peanut Butter Glaze for dessert.

Starving student chicken. Can't believe I've been making this for 23 years.
Marinate cubed chicken in white wine (or champagne) Cook pasta Heat 1/2 cup olive oil. Add 8-10 cloves of minced garlic and some cayenne to taste. Saute until just golden. Add chicken & cook through. Add pasta, 1/2 cup minced parsley & 1tsp soy sauce. Serve with parmesan cheese. Sent from my LM-Q710(FGN) using Tapatalk

Last night and tonight was creamy chicken and wild rice soup with rye bread. It's so good! I'm sad it's all gone. Definitely going to be making it again.
No idea what we'll have tomorrow. Nothing appeals to me right now. |

Dh made dinner as I was on a 4 hour career assessment call with dd17. He baked chicken with Mediterranean flavors and roasted broccoli.
