the problem I'm having with going vegan
I could be vegan. I want to be vegan. I can do without/find healthy substitutes for everything except butter! I bought the Earth Balance...and it tastes good. The only problem that I'm having is that my goal is to eat as naturally as possible, meaning simple ingredients, minimally processed. When I look at the ingredients for EB, I just think, "Wow." Butter just seems so much more natural and simple (ingredients: cream).
FWIW, I also have this issue with veggie "meats." I look at the ingredients for the meatballs, burgers, etc., and it's just so much complicated stuff.

I feel the same way. Now I just avoid all those things except for the occasional gardenburger if I eat out.

Personally when I went vegan...i just didn't do substitutes. No soy. I think substitutes defeats the purpose. It is like.....I need animal products.....just using a poor substitute.
I like you cut out butter and use something like EVOO or coconut oil.

We've use lentils/peas in place of ground meat... its not a perfect substitution, just an idea.

I Earth Balance. I think it's better than butter, so I guess I'm used to it now.
But, almond butter is really good on toast and a must healthier option to boot. It has a good amount of calcium per serving.

what about coconut oil. The "refined for high heat" is just like butter to me, and I'm a pretty picky eater.

I forgot to mention...if you put olive oil in the fridge in a small container it will harden. A large container takes longer. I like to heat it a bit with some herbs like rosemary and then put in the fridge. Once it hardens you can spread it on things or just put a little on pasta and feel like you are buttering it.

Has anyone tried the chickpea cutlets in veganomicon? http://www.chow.com/recipes/11364 They are raving about them at MDC.
We use Earth Balance, so I can't be much of a help there, but I totally agree that I'd rather eat a processed product like EB rather than a pesticide-pumped, pus-filled dairy product. I try to avoid processed foods, but I don't mind eating them occasionally.

I've used coconut oil on everything that I would have used butter on, and been very happy with it. In fact, even when the Daniel Fast is over, I'm so sold that I'm going to keep using it.
