grilled salmon, baked sweet potatoes, green beans for my guys and another salad just like yesterday for me (I've got cabbage I'm trying to use up...plus I neeeeed the roughage). I wish we had pesto for the salmon. It was pretty plain. But our basil plant didn't do well last summer at all and I didn't get any made and frozen like I normally do

In an effort to use up a variety of leftovers hanging out in my fridge I sort of made a hodge podge casserole for the kids. Sort of a mix between baked spaghetti and pizza. I have pasta in homemade tomato sauce on the bottom. Topped with shredded colby jack cheese. Topped with pepperoni. Then added slices of fresh farm mozzerella cheese on top (the "white stuff" as the kids referred to it....). Baked and served.

I need to go put a roast in the crockpot for today. I plan to serve it with oven roasted red potatoes and carrots and sauteed cabbage.

We had fetuccine alfredo with grilled chicken and broccoli last night. SO GOOD. Tonight, going out for upscale burgers with some girlfriends--happy birthday to me!

Last night we had homemade pizza. I've been trying a new gf crust every time I make it hoping to hit on one that is actually good. This one wasn't too bad.
Tonight I'm making chicken and potato chowder.
