low sugar dressing for strawberry spinach salad?

Anyone have any good recipes? I love poppyseed dressing for strawberry spinach salad, but the recipe I have has soooo much sugar. I found another recipe online that was balsamic vinegar, honey, and oil. I think the vinegar was too strong. It was okay, but not great. Anyone have any good recipes?

The other day I just blended strawberries with apple cider vinegar and some avocado oil. It was delicious!

I like to mix olive oil, lemon juice, shallots, S&P with a bit of honey for dressing. I got the recipe without honey originally, so perhaps give that a try? I found I need the sweetness

The flavor is really good and not too sweet. Plus the mustard helps to emulsify it so it doesn't separate as quickly.
