This is the zucchini saute I made last night - finally got to try out my julienne peeler. Which made it a little finer than we're used to, but it worked and now I'm curious to try zoodles.

Quick, easy, healthy, delicious. I used coconut oil instead of olive oil because of the high heat, and slivered almonds b/c I didn't have any sliced.

Tonight I'm pulling balsamic chicken stew out of the freezer. Might do salads with it; we're swimming in lettuce over here.

Last night we had grilled salmon (with pesto), salads, and one of my favorite ways to do zucchini: slice into rounds, dip in egg, coat with a mixture of Parmesan/breadcrumbs/Italian seasoning, place on oiled baking sheet and bake at 375 for 20-22 minutes. I spray with oil and broil at the end for a couple of extra minutes to brown it, but not sure that's totally necessary. We like to dip them in marinara. Yum.

Tonight DH's project group at work is having a party, so it's pizza and a babysitter for the kids and potluck with party food. I'm taking a taffy apple pizza (old Pampered Chef recipe)--haven't made that in ages. Sugar cookie crust, spread with a cream cheese-peanut butter-brown sugar mixture, topped with sliced apples and crushed peanuts. Supposed to be drizzled with caramel but I don't have any, didn't want to buy a whole jar and don't feel like making it so I'll skip that part.
