What did you guys make on the 4th?

We just got home from a 5 day family reunion camping trip. Had such a blast! Did all our cooking over the fire. Mostly consisted of meat (steaks, chicken breast, hamburgers, hot dogs) and veggies cooked in foils. Super delicious.

We went to a friend's for the 4th. They BBQed chicken, pork chops, and hot dogs. Smothered potatoes and the baked beans recipe I posted last month on the side. I made toffee cake for dessert.
Yesterday we had chicken and rice with creamy roasted red bell pepper sauce and Italian blend cheeses.

I'm going to a friend's tonight for a girls night I'll be cooking fajitas for the two of us. And I bought GF chocolate brownie cookies and Reddi-Wip for dessert. And there's wine chilling in her fridge...
The guys will be eating their usual guys' night casserole - chopped sausage, brown rice, and shredded sharp cheddar with enough half and half to make it creamy. I'm not a big fan, but they love it and it's a big, special thing for them

We had pan fried chicken with chanterelle mushrooms (that I found at the farmers market), peaches, tomatoes, and bread with olive oil.

I wanted chicken, rice, and gravy but I'm out of beef broth...
We had sauteed chicken with pan-fried potatoes and green beans (steamed, then browned in olive oil in my cast iron skillet). Leftover toffee cake for dessert.

I'd share some with you if you were closer. I love chicken, rice and gravy. It's soooo yummy - ultimate comfort food. I make mine with chicken broth though. Do you have some of that on hand?

What are your go to recipes for chicken rice and gravy?
I used to make it with cream of mushroom soup. Back in the day when I wasn't by the ingredients on it. My kids still ask for that dish so I've been casually thinking about an alternative. Seems that it should be easy enough.
