We usually split a cow with a friend. I would talk to the farmer. If she was charging by the actual weight, then she probably would know how many pounds you went home with; but if she charges by hanging weight, she needs to know how much you got. There are butchers out there that will short her, and that is bad for business.

That is low. Some things that can effect the final amount you bring home are things like if you reqested a lot of boneless cuts, if you get organs/fat (which may not have been included in the hanging weight), the type, age and condition of the animal (dairy breeds have a higher proportion of bone to meat, younger animals will have more bone and thinner ones will too) and what the processor normally leaves on at hanging wieght (it isn't standardized-some leave some organs, some leave the head, some leave varing amounts of interior fat). But even with all of that and considering you did get some bones(they probably only included the leg bones), some organs and fat that still seems low to me.
