cake help
I need to do a nut free dairy and egg free and gluten free birthday cake.
It will be for Cecilia to be able to share with her small "co opt" school. One of the girls is allergic to nuts dairy and eggs. We do gluten free. The nuts I can handle and we have done some decent gluten free cakes though we still did dairy and eggs. None have been ideal though.. So give me ideas I have time so Id love to test some out before (October 26 is the date) there are only 5 students total so leaving out 1/5 would be sad. Also any tip on how I can assure my prep and cooking spaces wont cause allergy cross contamination.

I love this cake. It is not gluten-free but it meets your other criteria, so I would try it with a gluten-free flour blend. I have no idea if Earth Balance meets all those criteria, so the frosting might not be allergen-free. I never make the frosting anyway. But the cake is excellent and I get tons of compliments on it!

Are you looking for a mix or a recipe?
Earth's balance should meet all your criteria. Use the sticks. It by itself makes rotten icing if you mix it half with shortening or coconut oil ( unless your nut free person also reacts to coconut) For a mix the king author flour are great with the extra and I think can hold up to replacing the eggs with flax or egg replacement. Curious any have a non chocolate cake they like? Cecilia isn't big on chocolate.
