Dairy Substitutes in Recipes
1. Soy milk, rice milk, nut milk, or water (in some recipes) can be used in place of dairy milk.
2. Buttermilk can be replaced with soured soy or rice milk. To make soured milk add 1 tablespoon of vinegar or 1 tablespoon of lemon juice to 1 cup soy milk (or rice milk). Allow the soured milk to stand for ten minutes before adding to recipes. 3. Soy cheese can be found in health food stores. (Be aware that many soy cheeses contain casein, which is a dairy product.) 4. Crumbled tofu can be substituted for cottage cheese or ricotta cheese in lasagna and similar dishes. 5. Tofutti nondairy sour cream is yummy. You can also make sour cream using tofu: Tofu Sour Cream 1/2 lb. Tofu, patted dry 3 tablespoons vegetable oil 1 teaspoon maple syrup or agave nectar Juice of 1 lemon 1/2 teaspoon salt, or to taste Mix ingredients in a blender or food processor until smooth. 6. Tofutti nondairy cream cheese is available in some supermarkets and kosher stores.
