Your favorite meatloaf recipes, please!
Mine tastes just like a huge meatball b/c I use the same recipe I use for meatballs. I want something better for the next time I make meatloaf. Think Diner. Dh always orders the meatloaf if we find ourselves at a diner or a mom'n'pop type restaurant. Mine is bland and boring and I don't blame him!

I haven't made meatloaf in YEARS (I just started eating meat after 5 years) and never really used a recipe, but here was a approximation of what I did. The good thing about meatloaf is that you can really throw whatever in it and it can work.
2 lbs organic lean ground beef 1 egg ^Edited to add about 1/2 cup milk 1 small yellow onion, diced Maybe 1/2 cup whole wheat breadcrumbs or oats, or combo of both 3-4 cloves garlic diced Maybe 3 tbsp ketchup 1-2 tsp dijon mustard...you could use dry mustard powder if you didn't have dijon Salt and fresh ground black pepper Mix it all up with your hands, and form into loaf in a roasting pan. Then put a thin "glaze" of ketchup on top with a pastry brush and bake at 375-ish for an hour-ish You can use BBQ sauce instead of ketchup if you want.

mix mince beef and mince pork half half
add one beaten egg, breadcrumbs, cubed green pepper, onion, garlic, season to taste, worcester sauce, herbs like basil, parsley, sage, whatever takes your fancy, small tin of tomoato puree, i think that's it. Stuff into loaf tin, Cook unitl it has come away form the sides (40 mins approx) eat hot, or cool and eat slices cold at a picnic (yes, I know you said dinner) |

Mine is very similar to Katie's
2 lbs lean ground beef 1 egg 1 small yellow onion, diced 1 Green Bell Pepper 1/2 cup breadcrumbs 3-4 cloves garlic diced 3 tbsp ketchup 1/2 cup milk for added moisture Saute the onion and pepper with garlic. Mix in with all ingredients by hand. I top mine with a glaze of ketchup mixed with brown sugar.

alton brown's recipe is american classic meatloaf to me. Hubby agrees and we stopped looking for a recipe after finding it:

I whiz everything but the meat in the food processor then mix that paste with my hands into the meat, mold, stick in the meat thermometer and put in the oven. I do the glaze like he says and it's very yummy.

my fav is just meat, onions, tomato paste, salt, pepper, bread crumbs, egg...I have no amounts, I just throw it in and mash it around. top with ketchup and bake
YUM if you don't want to take the time to chop onions, you can just add dehydrated onions OR onion powder also, if you are like me you will like shredded or chopped carrot and celery too. my kids don't like that as much though. and, sometimes if I don't want to grind up bread crumbs (i make my own from our loaf bread) I will throw in oats instead of bread crumbs. Overall, it is VERY good and my family and others love it. |

Tonight is the night! I used Anani/Katie's recipe. I did skip the mustard b/c we don't have mustard fans here. We shall see--I'm excited! I must redeem myself from the meatball loaf of many years.
