Default Using up leftover turkey

I have a big bag of chopped turkey meat (off a roast turkey) and a lovely rich stock I made off the carcass. How can I use these up? I have a guest for dinner tonight and I'd quite like to cook something impressive and use these up as well. It's Australian Summer, too, so prefer not to use the oven!

If you decide to use the oven...turkey enchiladas

SOme kind of pasta salad or greens-based salad with turkey in it. (Greens, toasted walnuts/pecans, blue cheese, dried cranberries, balsamic vinaigrette). You can make homemade croutons for it too...but that involves the oven or grill.



(Save the stock in the freezer for soups when it gets cold out or for other recipes).

So far we've done Turkey Burritos, Turkey Crepes and Turkey Soup. (And of course dozens of turkey sandwiches)

Usually we only have enough leftover for one leftovers meal and the soup, but I bought expecting 10 people for dinner with planned leftovers and it turned out to be just our family of five -- and I'd cooked a turkey and a ham...so lot of leftovers to use up creatively so the boys will actually continue to eat it through the week.

I hadn't thought about just using the turkey the same ways that I'd use leftover chicken - of course! Turkey burritos, crepes, and enchilades all sound yummo but I don't have the ingredients for any of those tonight.
I probably won't make soup tonight either (too hot) but how do you make turkey soup, for future reference?

Hubby makes soups & stews, not me. But it looks like he takes the meat, adds veggies & spices and puts it all in the crockpot for hours with water and chicken broth. Then when the potatoes are done, I make the pasta He doesn't like soft mushy pasta so it gets cooked separately.

Mmmm, yes, I'd actually thought of that one. I just need to buy some arborio rice.

I also like the green salad idea, think I might do that for lunch today!
