Two Quick One Dish Recipes

I’ve been experimenting with diner recipes lately and these are two that i’ve found to be quick and easy.


Tex-Mex Skillet Diner
1/2 package spiral noodles
1 lb taco meat (i use the already seasoned ground turkey from walmart)
1 large can of green enchalada sauce (it can be done with red, but i hate the red sauce)
1 can mexicorn
1 small can of sliced olives
1-2 cups cheddar cheese


This recipe is as simple as simple can be. Cook the noodles accorind the package directions while you brown the meat in a skillet. Drain both and then add them together in the pot (or a casserole dish if you prefer) Add the sauce, corn, and olives and then cook until heated through. Top with the cheese before serving. its delicious and easy and cheap.


Now you’ve got a half a package of spiral noodles don’t you? Well this is for later that week


Italian Skillet Diner
1/2 package of spiral noodles
1 lb sausage (or ground beef, or italian flavored turkey meat)
1 large can crushed tomatoes
1 small can of mushrooms
1 Tbsp garlic
Italian Seasoning (to taste)
1-2 cups cheese


This is done almost exactly like the Tex-Mex skillet. Cook the noodles accorind the package directions while you brown the meat in a skillet. Drain both and then add them together in the pot (or a casserole dish if you prefer) Add the tomatoes, mushrooms, and seasonings and then cook until heated through. If the recipe tastes too tinny (canned tomatoes can sometimes) add a tsp of sugar and that should take care of it. Top with the cheese before serving.


Chopped onions can be added to either recipe and it would be delicious but i’m too lazy to chop onions most of the time and i leave them out
