Easy Goat cheese and pesto quiche!
I love this one...I can't remember where I found it, so I'll paraphrase. Very affordable, and so full of flavor! This makes a double batch, and feeds about 5 people.
2 frozen pie crusts 6 eggs 1/2 C whole milk or half and half (I've used 2% in a pinch!) 2 TB pesto 2-4oz goat cheese 1/4 C Sun dried tomato (opt) Preheat oven to 400. 1. Spread pesto evenly over bottoms of pie crusts. Crumble goat cheese over the pesto. 2. Beat eggs and milk together, and pour on top of goat cheese/pesto mixture. Sprinkle sundried tom. over top. Bake 20-25min, or until firm in the middle. Enjoy! |

Is this really .... um.... goaty? It sounds marvelous, and tempting, and breezy-sophistocated but I'm kind of afraid to try it. The natives don't like it when Mom gets too creative.

Cut the cheese down to 2oz. Or, you could use feta, and it would be just as yummy, methinks.
