tonight was a delicious meal with a bunch of family. Leg of lamb. Cheesy rice. Buttered carrots. Apple pie and ice cream for dessert.

I need inspiration. I’m baking today for tomorrow and really don’t want to make dinner. Pecan pie is done and mixed berry rhubarb is baking.

I made rice bowls tonight. That is one of my favorite easy meals that everyone loves. This week I got a rice cooker and I think I like having it. On my glass stove top I have to babysit the rice while I cook other things, but not in the rice cooker. So rice, seasoned ground beef, and roasted veg (broccoli, onions, and diced butternut squash), topped with yum-yum sauce.

Saturday I hosted a family dinner at our home. I made leg of lamb, cheesy rice, buttered carrots. Apple pie and ice cream for dessert.
Easter dinner today hosted by my mil. She did steak, which is our favourite! Roasted asparagus, carrots, and brussel sprouts as a side. Fries. Fruit and cream cheese dip. Cupcakes and ice cream for dessert.

Easter dinner was lovely. DH made sous vide leg of lamb with lots of garlic and I roasted new potatoes and a butternut squash, and added a salad.
We had a gala coffee hour after church and the family dessert buffet with cousins in late afternoon for which I made far too many treats, so every course was covered. We're supposed to celebrate dh's birthday tonight (it was on Easter) but we have Speech and Debate until late so I may ask him to postpone until tomorrow. (Unless he wants to grill his own steak!)

We had ham and greek lemon potatoes yesterday and I am making scalloped potatoes with the leftover ham for dinner tonight.

I made Egg Rolls in a Bowl. It wasn't bad....very healthy. Surprisingly DH liked it a lot. It called for ground pork and I couldn't stand the smell while I was cooking it.

FWIW, I usually make eggroll-in-a-bowl with ground turkey or ground beef. I'm not typically a fan of pork.
We had takeout pizza for dinner tonight.
