1 can full fat coconut milk
1/3 c sugar (tried honey, but yuck!) 1/3 c chia seeds 2 T cocoa powder dash salt 1 t vanilla extract Whisk all together in a mason jar for a solid minute. Then let it sit and whisk it every 3-5 minutes for about 10 minutes or so. The pop it in the fridge. It usually takes about 8 hours to set, so I like to make it before bed. If your coconut milk is "curdled," it won't work. I recently got some that had been frozen so the consistency wasn't right. Zapping it with a wand blender fixes that, but only use the wand blender before you put in the chia seeds. Don't zap them! And I also was using Frontier brand cocoa powder and I bought some cheaper organic cocoa powder. My pudding wasn't nearly as good with the new cocoa powder. weird!

Also keep in mind that enough fiber without enough hydration will not keep you "unplugged". Fiber needs water to help keep things moving. So make sure you are drinking enough of it!

what about a smoothie? there is a lot of fibre in raspberries in particular. kiwis and avocados too.
