Last night we had Baked Cajun-spiced Chicken and Kale chips. I got complaints about the kale while it was in the oven so I made macaroni muffins from some leftover elbows and steamed some cauliflower.
Tonight I got sides going, but couldn't decide on a protein, so dh went out for takeout.

Macaroni muffins? I have two kids who would love those.
Kids are at my IL's tonight so we are going out! I'm planning on chicken and waffles - leftover craving from my 4 year old's pregnancy that I never fulfilled.

I made Parsley Scallion Hummus Pasta when my son's vegan girlfriend was here for dinner last night. It was different but good. I used vegetable broth instead of water, and you need more than you think to thin the hummus as it warms. I have to admit that a sprinkling of [optional] cheese helped the dish quite a bit.

I cobbled together tortilla soup using the chicken no one liked two weeks ago. It turned out reasonable well.

I made sneaky pizza tonight. Sneaky because I put all the veggies in the sauce and blitzed it, then presented it as plain 'cheese' pizza. I'm sick of making food and then having the toddler turn his nose up at it.
