Oh, I just made this with the C.O., a bit of agave, cocoa powder and peanut butter - I mixed it all together and froze it, then cut it into pieces... It tasted like peanut butter fudge. Soooo good!

• Xylitol also has a prebiotic effect, promoting the growth of friendly bacteria in the digestive tract.

• Xylitol inhibits yeast, therefore it cannot be used to raise yeast in baking.
i remember getting 'dental gum' from the hfs sweetened with xylitol - i think my inlaws brush their teeth with it. some people have a reaction (read: loose stools) if they eat too much. obviously like any sweetener it should be used in moderation... but i like it. the stuff i use is from NOW foods and i have it in our sugar bowl - no one ever notices the difference.

So some nuts are ok? I'm just confused because my naturopath wants me to do a candida diet (I haven't started yet), and I thought almond/cashew butter were on the list of ok things to eat. I assumed pb was ok too.

almond/cashew is fine.

kawani, i don't know that much about agave... if i were to guess i'd say it's maybe closer to honey? xylitol on the other hand i read is practically inert... it actively 'fights' the candida, as opposed to not feeding it, if that makes sense. i don't think it has the same kind of minerals etc that agave or honey has, though...

i don't know how much my mom pays for it... but it's a little pricey if you get it at the HFS. i'm seeing a 1 lb container for $6.76 at lucky vitamin. i don;t bake with it, though, so i don't use all that much. mostly in tea or coffee or in my kefir.

Thanks for the info on peanut butter!

I saw a gallon container of xylitol at a discount HFS for $19.95. I wasn't sure if that was a good deal or not.

It does OK in smoothies? Hmmm...I'm about to make a smoothie that needs a little extra sweetness. After trying the stevia extract in tea, I was scared to use it in anything else. Maybe I'll try it after all....
