Default Help me make up a lentil vegetable pie...

I have a frozen pie crust, lots of lentils, onions, potatoes and spices. I was thinking I could make a lentil stew type filling...
  • 1 tbs vegetable oil
  • 1 onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 can diced tomatoes
  • cumin, chili powder, and masala powder???
  • 1 cup lentils, rinsed, drained
  • 2 potatoes, peeled, diced

Saute onions and garlic in the oil... add tomatoes, lentils and spices and simmer till lentils are tender...

Cook the potatoes until tender...

Mix together and pour into pie crust... lay top crust over the top. Bake ??? how long??? At what temp???

Could you make it like a Shepherd's Pie, perhaps even putting mashed potatoes on top?

Wow, sorry about the typos.

This recipe is my friend's grandma's recipe. I love it but DH finds it to be too starchy...oh well. Now I want to make it again soon! I think I'dd add more seasonings, though...maybe thyme, and some other savory spices.

1 cup cooked lentils
2 prepared pie crusts (one for top and one for bottom)
6 c water
2 bullion cubes
1 med onion, chopped
2-3 carrots, sliced
2 stalks celery, sliced
3-4 potatoes, peeled and diced
3 T flour
3 T butter
1/2 tsp sage or poultry seasoning
1 tsp celery salt, optional

Cook veggies in water with bullion until tender. Brown flour in large skillet then add butter. Make a roux using one cup of hot liquid from the veggies, cook until it thickens. Then combine with veggies, lentils, and herbs. Line pie pan with crust, put in filling. Cover with top crust, crimp edges. Bake in 350 oven until done, about 30-45 mins.
