We're doing steak and carrots and... I dunno... rice or something. I've got a quarter of a head of cabbage to use up. Can you throw cabbage in rice for a side dish? Hmmm... meh. Never mind. Maybe I'll save it and make a soup tomorrow that I can toss it in.

I haven't done a coffee rub on steak for a loooong time... dh doesn't like it. I might put it on the smallest one just for me.

I have a huge salad with strawberries, almonds, mushrooms, crumbled goat cheese and berry vinegrette for me with GF veggie burger and steamed asparagus.

My DH and boys have been snowboarding/skiing for a few days and will be home tonight. Have roast in crockpot with carrots, zucchini, potatoes and mushrooms for when they get home.

Heather! This Louisiana girl DESPERATELY NEEDS to know how to make a GF roux!!! I've done a cornstarch slurry to thicken gravies but NEED to know how you accomplish this feat! (insert begging emoticon here)

We had spaghetti and salad. I made my own sauce tonight and reminded myself that I really need to stop buying jarred sauce - I've been buying the Muir Glen organic kind and it's like $4/jar, whereas if I buy Muir Glen organic diced tomatoes at BJ's (which I do anyway) it's just over $1/can, and we only need 1 can to make enough spaghetti sauce for us! The savings is ridiculous and it takes like 5 minutes to make a delicious sauce.

Lunch and supper were both thrown together. Lunch was chicken, chile peppers, cheese, and seasonings. Boys had theirs with leftover pasta, DH and I with tortillas. Supper was tuna, rice, cheese, and peas. Can ya tell I need to go grocery shopping?

Oh...oh...we have a Peruvian chicken place in town...and it is soooo good! But they run out of chickens quickly. You have to get your order in early.

It is super easy, do it like you would a regular roux but increase the flour to oil ratio. I used probably 1 and 1/2 tablespoons of flour to 1 tablespoon of oil. Then cook the you know what out of it. I am thinking it doesn't burn as easily as wheat flour roux does. I would let it sit a moment or two and it did just fine.
