January meals
I thought I would start this months, and because I was excited about dinner.
Does anyone else eat black eyed peas on new years day? I made what I and dh thought were really amazing black eyed peas, collared greens and corn bread for dinner tonight. Sent from my Pixel 2 XL using Tapatalk |

This is one area of my life where I am a bad Southerner. (Well, that, and I really stink at handwriting Thank-you notes)
I have not made black eyed peas for new years in about 15 years. I made chili tonight, with three kids of beans. None of which were black eyed peas. |

If love a good recipe for black eyed peas, but, no, we don’t. We had a full roasted turkey and homemade honey rolls and the rest of thanksgiving sides.

I made a one pot pasta dish with chicken and pesto last night. It was easy and a good way to use up the pesto.
Probably making Thai peanut noodles and some slaw tonight. I need to figure out how to add some protein that is not chicken. |

Last night was charcuterie. I was so tired so was so glad that all I had to do was put it out.
Tonight I'm going to try to make a creamy crockpot chicken thing to put over rice. Don't have a recipe so going to make it up. Speaking of which, I better get started! I'll serve green beans with it. |

Black eyed peas are a type of bean, they are in the cowpea family. They have a light color except for a black dot. On the inside of the curve.
They were first domesticated in Africa and came to the American south with the slaves. For a very long time in the American south they were the slave food they could grow them selves and after the civil war they were generally pore people's food. Last night was quinoa and chickpeas bowls
other meals no particular order Black bean and rice Mexican skillet with broccoli and avocado ham and potato soup serving with some yeast rolls black bean stuffed potatoes (sweet for girls and myself, russet for DH) biscuit bubble pizza with bagged salad Italian vegetable pasta soup Crockpot Lentil Sloppy Joes something with whatever meat I have right now in my freezer probably chicken.. |

We're in the middle of Finals right now. My two older girls made semi finals in the same category. The younger one (who was dragged into this kicking and screaming! by the older one) made finals. The drive home is going to be interesting.......
Tournament eating is so difficult! There's just no time. I brought lots of shelf-stable foods this time, but forgot paper plates. :doh I was able to run out to a local grocery store this afternoon and get tortillas, deli stuff, and salad kits (with dressing!) so most of us had reasonably healthy wraps for dinner. ---------- Post added at 06:43 PM ---------- Previous post was at 06:41 PM ---------- Quote:

I lived in England as a child, more than 45 years ago (yikes). It was tradition for the neighbors to bring around pots of black-eyed peas on New Year’s Day (or was it Boxing Day?). Everyone would have a taste from the same spoon, but my mom would run to the kitchen to get us our own spoon.
Tonight I made gf Mac and Cheese with chopped ham and kale. I used this recipe https://www.garlicandzest.com/southe...-kale-hotdish/ but I used twice the pasta and twice the cheddar, with no crumb topping. It was perfect. |

Informative - oldest's Greek Tragedy speech finished 11th and the Storytelling vs Entertainment speech finished 4th. A "Celebrity Alumni" (a graduate who won everything at Nats last year) ranked the Greek Tragedy Speech as "First in the room!" on her ballot which I think made up for everything! We're home and I have to go grocery shopping. I have a taste for coconut rice, so perhaps I'll get what I need to make Chicken Satay to go with it. |

TickleMomster, I have seen "starving student chicken" mentioned by you before. What is it? My roommate in college had a Starving Student Cookbook, but that was 28 years ago, so I am guessing it is not from that!
I made some turkey meatballs last night and some sweet potatoes because I needed to use them up, but there was only enough for 4 people, so it was a lot of FFS last night. (everyone eats at different times, so it did not really matter.) I do not know what is for tonight. I want a ground beef dish that is one pot-ish, but not like homemade hamburger helper or chili. And not tacos. Out of ideas. |

Last night I made roasted salmon, baked sweet potatoes, and creamed spinach. Tonight I'm planning Italian meatballs, rice, and marinara sauce and a salad but not sure what kind.

It's from The Chicken Soup for the Soul cookbook.
1/2 c olive oil 8-10 cloves garlic minced 1/2-1 tsp crushed red chili flakes (I use a shake of cayenne.) 1.5 pounds chicken diced 1/2 - 1 cup white wine (I use leftover champagne.) 1 lb spaghetti/linguine 1T soy sauce 1/2-3/4 cup parmesan cheese Marinate the diced chicken in the wine for at least 2 hours. Start the pasta water boiling. Cook the pasta. Meanwhile, heat the olive oil in a large skillet. Once hot, add the garlic and the red pepper flakes. Saute until garlic is golden. Turn up the head and add the chicken, reserving the marinade. Cook until chicken is done. Combine the pasta, chicken and sauce, soy sauce and parmsan. Serve. |

Last night we had Crockpot Coconut Vegetable Curry over sorghum.
Tonight it was Mississippi-style Beef Short Ribs, roasted Brussels Sprouts, and roasted baby potatoes. |

Ds20 is making Sunday night dinners going forward. Tonight was fajitas. A few bumps, but dinner was done and yummy.
