January meals

I thought I would start this months, and because I was excited about dinner.

Does anyone else eat black eyed peas on new years day?

I made what I and dh thought were really amazing black eyed peas, collared greens and corn bread for dinner tonight.

This is one area of my life where I am a bad Southerner. (Well, that, and I really stink at handwriting Thank-you notes)
I have not made black eyed peas for new years in about 15 years.

I made chili tonight, with three kids of beans. None of which were black eyed peas.

Re: January meals

If love a good recipe for black eyed peas, but, no, we don’t. We had a full roasted turkey and homemade honey rolls and the rest of thanksgiving sides.

I made these black eyed peas with corn muffins. They were so good https://minimalistbaker.com/smoky-in...-greens-vegan/

Tonight we had taco soup because we had 4 open bags of tortilla chips (seriously, what is wrong with people???)

Did you make it all at once in some giant pasta meal with mixed kinds? I totally would have!

Oh, my, word, it was the same kind of spaghetti from Costco! I can't fathom why they opened a new one every time! Gah! But, it will get eaten over the next couple of months. Teens!

I made a one pot pasta dish with chicken and pesto last night. It was easy and a good way to use up the pesto.

Probably making Thai peanut noodles and some slaw tonight. I need to figure out how to add some protein that is not chicken.

Last night was charcuterie. I was so tired so was so glad that all I had to do was put it out.

Tonight I'm going to try to make a creamy crockpot chicken thing to put over rice. Don't have a recipe so going to make it up. Speaking of which, I better get started! I'll serve green beans with it.

My sister and I started calling charcuterie Shark Coochie Coochie for some odd reason. (Okay, cause we're weird!) That's what we had on Christmas and NYE.

We're staying in a hotel for a speech tournament this week, so all our meals are ad-hoc and portable. I may have eaten nothing but granola bars and tic-tacs today. :shifty

Thank you for starting this! It's been crazy here with people staying over after Christmas and I'm only just getting back on board :)

Tonight we had Beef Goulash and rice.

As an Australian I have to ask....what are black eyed peas???

knitlove 01-05-2023 11:27 AM

Re: January meals

Black eyed peas are a type of bean, they are in the cowpea family. They have a light color except for a black dot. On the inside of the curve.

They were first domesticated in Africa and came to the American south with the slaves. For a very long time in the American south they were the slave food they could grow them selves and after the civil war they were generally pore people's food. It was a good basic crop because both livestock and people could eat it.

Tournament eating is something I struggle with. At the one last January I was thankful my adult kids recognized my low blood sugar and got me a Lotus. How did the tournament go?

NY day we had normal something.

Tonight is beef shepherd’s pie.

These are the black eyed peas that I make every year. We actually had them on NYE this year.

They are so amazing!

We're in the middle of Finals right now. My two older girls made semi finals in the same category. The younger one (who was dragged into this kicking and screaming! by the older one) made finals. The drive home is going to be interesting.......

Tournament eating is so difficult! There's just no time. I brought lots of shelf-stable foods this time, but forgot paper plates. :doh I was able to run out to a local grocery store this afternoon and get tortillas, deli stuff, and salad kits (with dressing!) so most of us had reasonably healthy wraps for dinner.

I'm going to make those when we get home. With a whole pound of bacon, how can you go wrong?! :giggle

I lived in England as a child, more than 45 years ago (yikes). It was tradition for the neighbors to bring around pots of black-eyed peas on New Year’s Day (or was it Boxing Day?). Everyone would have a taste from the same spoon, but my mom would run to the kitchen to get us our own spoon.

Tonight I made gf Mac and Cheese with chopped ham and kale. I used this recipe https://www.garlicandzest.com/southe...-kale-hotdish/ but I used twice the pasta and twice the cheddar, with no crumb topping. It was perfect.

I like doing the pre-made salads at tournaments. I bring canned chicken to add protein.

That’s super exciting about finals! What event?
My kids both made finals in Impromptu at our last tournament. It was super fun having them both on stage as they announced the final results.

I got the tuna pouches - not bad, but the kids wouldn't eat them. I'll have to try chicken next time.

Informative - oldest's Greek Tragedy speech finished 11th and the Storytelling vs Entertainment speech finished 4th. A "Celebrity Alumni" (a graduate who won everything at Nats last year) ranked the Greek Tragedy Speech as "First in the room!" on her ballot which I think made up for everything!

We're home and I have to go grocery shopping. I have a taste for coconut rice, so perhaps I'll get what I need to make Chicken Satay to go with it.

Those are great results! I'll have to look into the categories. We LOVE when alumni come judge. It means so much to the competitors.

Last night was starving student chicken. Tonight is soccer mom pasta in the IP.

Tomorrow is up for grabs. No chicken and no pasta. :think Coconut rice and chicken satay sound good.

Re: January meals

TickleMomster, I have seen "starving student chicken" mentioned by you before. What is it? My roommate in college had a Starving Student Cookbook, but that was 28 years ago, so I am guessing it is not from that!

I made some turkey meatballs last night and some sweet potatoes because I needed to use them up, but there was only enough for 4 people, so it was a lot of FFS last night. (everyone eats at different times, so it did not really matter.)

I do not know what is for tonight. I want a ground beef dish that is one pot-ish, but not like homemade hamburger helper or chili. And not tacos. Out of ideas.

Last night I made roasted salmon, baked sweet potatoes, and creamed spinach. Tonight I'm planning Italian meatballs, rice, and marinara sauce and a salad but not sure what kind.

I decided on this

https://damndelicious.net/2019/04/24...odle-stir-fry/
Only I don't have oyster sauce, so I will have to use tamari and hope for the best.

The Tickle Momster 01-10-2023 01:51 PM

Re: January meals

It's from The Chicken Soup for the Soul cookbook.

1/2 c olive oil
8-10 cloves garlic minced
1/2-1 tsp crushed red chili flakes (I use a shake of cayenne.)
1.5 pounds chicken diced
1/2 - 1 cup white wine (I use leftover champagne.)
1 lb spaghetti/linguine
1T soy sauce
1/2-3/4 cup parmesan cheese

Marinate the diced chicken in the wine for at least 2 hours.

Start the pasta water boiling. Cook the pasta.
Meanwhile, heat the olive oil in a large skillet. Once hot, add the garlic and the red pepper flakes. Saute until garlic is golden. Turn up the head and add the chicken, reserving the marinade. Cook until chicken is done. Combine the pasta, chicken and sauce, soy sauce and parmsan. Serve.

Well, with a few modifications. DH and Prima absolutely, positively, in NO WAY will eat ham. (But thy both like bacon. I know, weird, right?) So I subbed sausage. And then I put it all in the Crock pot and added frozen collard greens from the garden and homemade chicken broth and bouillon. I'm out all afternoon, so we shall see....
