Freezer Meals
 
My DH is having major surgery in a few weeks and my goal is to fill my chest freezer with approximately three weeks of meals.

What are your favorite make ahead freezer meal recipes?

It depends on what you consider freezer meals! I keep components on hand and things I can cook from frozen (including leftovers to reheat - I do the cook double and freeze half method), not necessarily whole meals ready to go.

I usually have Meatballs, Marinara, Pesto, broth, and taco meat in my freezer at any given time. I can make several meals from those.
Meatball Casserole - meatballs, marinara, pesto or pizza sauce, cheese; bake at 375 until bubbly
Also Meatball subs, Italian Wedding Soup (broth, pasta, spinach)


Frozen peppers and onions for crock pot/instant pot meals

My thought is to do some of everything...cook double and freeze half for casseroles or soup and such, as well as maybe some pre-assembled crockpot meals that I can assemble raw, freeze, and then just have ready to dump in the crockpot when I need it.

I made the meals from the original freezer meal cookbook. Took 2 full days to do 30 meals.

I did 15 meals, but doubled those. It was completely worth it.
