Delicious healthy cookies! GF/DF
Even my very picky, sugar loving teen likes these.
Only sweeteners are bananas and some honey/maple syrup. Here's the list of ingredients for your perusal, before you go to the link: Ripe bananas Honey/maple syrup Eggs (I think an egg sub would be fine) Baking soda Peanut butter (or any nut/seed butter) Oat flour (don't see why any GF flour wouldn't work) Chia seeds (very important for thickening the batter) Craisins, raisins, and pepitas. (Could sub whatever you like) Cinnamon Vanilla The batter has to chill at least 4 hours. The recipe said to use a 1/4 cup scoop for each cookie but I used a regular cookie scoop and got 24 cookies instead of 12. Normally, sweets make me feel kinda icky but these don't. Thanks for the recipe! My oldest made these a couple of times and she really liked them.
I decided to fool around with the recipe a little today. We have peanut allergies here, so I used almond butter, we're out of pepitas and sunflower seeds (and I'm craving carrot cake, of all things!) so I subbed grated carrot for them and replaced the craisins with regular raisins. I almost added crushed pineapple, but decided against it. Maybe next time! (Along with perhaps coconut and/or flax.) Verdict comes tomorrow after the batter has sufficiently chilled and I can bake them. :) |

We are neither GF nor DF but I am always looking for healthy snack foods around (ds ate 6! muffins so far today. In between large meals).
I have 2 question groups: 1. Oat flour? Is it expensive. If yes, how so compared to regular flour. If its a large difference can I use regular flour? 2. Healthwise. Oat Flour compared to wheat flour. Very healthy even if we are not GF? |

Oat flour is cheap; it's just ground oats. I whiz the Quaker oats that I buy in bulk at Costco in my blender. (Food pro works, too. )
Depends on your idea of healthy - but oat flour is a whole grain, so much lower glycemic index than white AP flour. I'm sure you could sub whole wheat if you don't have oats. |

Yep, to make oat flour, just put the amount in your food processor. I think any flour would work just fine.

These are a BIG BIG BIG hit here.
I used honey instead of syrup. No real reason other than I have more honey and syrup and dh occasionally makes pancakes as a special occasion. DD LOVED them. DS loved them as a snack but stated they weren't really cookies and states we shouldn't call them so. I explained think of them as a healthy snack. DH loves them and says we need to take these hiking instead of cliff bars and such. the only thing is they did flatten a little bit. I only did the 4 hours instead of overnight so will chill dough overnight to see if it get more rise (<-- I am sensing a pattern with my baking lately). But they weren't completely flat at all. And my people don't care, Ill just do it for comparison sake. Will definitely make again soon! |

I'm glad everyone likes them as much as us!
Before the social distancing, I took them to our weekly brunch group where lots of high sugar treats show up. Everyone loved these so I knew it wasn't just me. Yesterday I tried some muffins from Running With Spoons. She has a lot of recipes with more nutrient dense ingredients. My kids really liked these (they are not DF), but I don't advise adding extra chocolate chips to the top, I did and they burned. Also, I doubled the recipe and my food processor was gasping. I've started buying massive amounts of bananas to help with the boredom baking. :lol
I normally don't bake much. Lately it's been three times a week. I decided I had to make most of it healthier versions. When I had all little kids, I used to bake a lot and had a good set of recipes that used mostly whole foods, etc. When life got busier, I hardly baked at all so it didn't matter if I made regular things. This stay home business is kind of like have 3 toddlers and a newborn again. It's strange! |

Bc ds doesn't like raisins (though will eat in stuff, like did the cookies last time) and I had exactly a 1/2 cup left from almond cherry muffins I did. Finally, this time I will chill overnight. |

These cookies went over well in my house today. Super duper easy; only 4 ingredients - oats, bananas, a nut/seed (I used almond butter), and chocolate chips. I made half with chocolate chips and half with raisins.

I'm going to make both recipes now and chill for baking tomorrow.
I need to try and make some that aren't "bumpy." My 4-yo asks me to please make "flat cookies, not the bumpy ones." (She wants regular chocoalate chip cookies even though she likes these.) I'm going to try blending the oats to a fine flour, first, and adding chocolate chips without any nuts or fruits. See if she'll go for it. |

Ok, I made the 4 ingredient cookies today. I used raisins rather than choc chips.
I doubled the recipe and the nice part was we had no muffins out and ds said can we get muffins out of the freezer and I said hold on, I have these cookies I want to make. And soon they were ready to eat. The bananas could have been a little riper. I got them at the store today and tried to get the ripest ones. |

I made that recipe, too. We liked it but I thought they were a little bland. Then I realized they don't have vanilla. If I make them again, I'll add vanilla.
Tonight I made the other ones, in the first post, but with mini chocolate chips and no cinnamon. Kids loved them. I prefer the regular, with craisins, but these were good and I ate too many of them. But I don't feel icky, which is nice. |

I made them with caramel extract. :shifty
Vanilla has gotten so expensive over the last year or two so I've been experimenting with other flavorings. Caramel is good (it works really well with most nut/seed butters), but I haven't been able to find it recently in a natural version, only imitation. There are plenty of pure extracts at the grocery store, though. I want to try those cookies next with dried apricots, and probably some orange extract/zest. They might even be good with rosemary. :think Oh, FYI, the Ocean Spray low-sugar cranberries she linked to in the recipe are sweetened with sucralose (Splenda). |

I was looking for this recipe again because they have been a popular snack for my toddler! The bigger kids don't love them but I like having some options for him that won't disappear in a flash.
