Meals in June......
Happy New Month :)
It's getting colder here in Sydney, Australia so have been making lots of soups and slow cooker meals. Tonight we had Chicken Alfredo with pasta. Everyone loves it and I made a double batch so we can have leftover tomorrow ;) |

I am hoping that it will start to warm up so that I feel like eating things other than stews and soups. It has been a very unusually cold spring ( Seattle only had 5 hours at or above 70°F from the beginning of the year untill the end of May) This weekend was the first time we have had windows open.

We had brown butter and mizthyra with gf pasta last night. I sautéed asparagus on the side.
Tonight will probably be lemon chicken with roasted broccoli and potatoes. If I get my act together. Otherwise it’ll be shredded bbq chicken sandwiches. And, yes, I would like it to stop raining! I don’t mind cooler than normal but I would like to see the sun! Sent from my iPhone using Tapatalk |

It was warm enough to eat outside tonight ( in long sleeves dh was cold) we had pasta with asparagus, bacon, zucchini I thought it was wonderful the kids didn't think much of it.

I made Minestrone last night with turkey sausages and corn bread on the side.
I'm thinking of putting chicken in the crockpot for tonight. Lemon chicken, maybe? I really want to try to make tiropita, but I have a meeting tonight and desperately need to practice and get some Father's Day sewing done before that, so it might not happen. So perhaps we'll just have broccoli or rainbow carrots to go with the chicken. |

My kind mom made a big batch of delicious chili for a crowd I was hosting. We had leftovers which made for a nice baked potato bar one night, and nachos the next.

green chili enchiladas
2 eggs can of green chili sauce, mild or medium based on who you are feeding can of refried beans package of sharp cheddar chesse pre-cooked ground beef, 2 cups whole wheat tortillas mix eggs, sauce, beans in blender layer that with tortillas, cheese, beef bake at 375 for 30 minutes top with cheese cuz it's ugly but easy |

Last night was sausage pasta bake. Leftovers today which was good as its freezing!
Vegetable ratatouille is on the menu tonight. New recipe for us so we shall see how it goes :) |

Tonight did not go as planned at all. So, I quickly made some ground beef taco rice and cut up pineapple. If you don't have a pineapple corer/slicer thing, get one. It is a game changer. So fast, and it seems like pineapple us the only fruit that has actually decreased in price this year.

Dh offered to grill, so we had burgers. I made lemon rice (with preserved lemons I made this Spring) in the IP and a huge salad from the garden.

Margaret spent the night at a friend's last night. I picked her up at noon today. Parked out front came inside for all of 5minutes..by the time we got back in the car the temperature inside read 127....
Tonight we're having vegetarian chili and corn bread which seemed odd for such a warm day but it's cheap. We're now spending more on gas than food and having to cut food to do so. |

DH made a couple of loaves of sourdough this weekend and we have oodles of leftovers. So tonight we're having Muffaletta, salad bar, and leftovers.

Over the weekend we had
Smoked/grilled boneless pork chops - the ones from Costco that are like 2" thick and grilled/smoked asparagus. I rebaked some leftover mashed potatoes and put cheese on them. We had enchiladas, rice, beans on Sunday. I made a veggie saute to go with consisting of bell pepper, onion, zucchini, and yellow squash. That was really good. Pulled spaghetti squash and chicken casserole out of the freezer. Steamed broccoli on the side.

I made coconut curry chicken, with yellow curry powder instead of red paste like I normally do. I used an older recipe that calls for sugar, and I forgot how sweet it was, but everyone enjoyed it and there are no leftovers.

Asian lettuce wraps with ground turkey, bean sprouts, radishes, and cucumbers. Probably rice, too.
