I need snack ideas for me.
 
My go to things when I'm hungry but not cooking a meal or about to walk out the door, are a heaping spoonful of natural PB or cheese or chocolate milk or maybe a handful or two of almonds.

Sometimes I'm not a hurry, but I just don't want cold carrots out of the 'fridge or an apple.

New ideas?

I like fermented things like a dab of Bubbies sauerkraut or a Bubbies pickle.

Apple or banana with peanut butter

Tortilla pizza (this is one of my favorites!) I like the Mission tortillas for it.

Smoothie (peanut butter banana chocolate is my favorite- I use unsweetened cocoa powder- the bananas are sweetener enough)

Cauliflower rice with veggies and soy sauce is only veggies, but feels like a meal

I make a lot of bean patties in advance and freeze them. Warm up and put ketchup and mustard on them.

My snack list:

turmeric chia seed pudding made with coconut milk

pistachios

triscuits and cheese
granola and yogurt

oatmeal with nuts, craisins, etc

homemade popcorn

bagel and cream cheese

Avocado with or without toast

Healthy homemade cookies

lettuce salad, bean salad, quinoa salad

Sliced cucumber

Crunchy peas

Dried fruit?

Yogurt and dress it up with some nuts, cereal or fruit

At the Asian market I can some times find sweet potato that are dried like fruit, but still semi soft. Very good.

Can you bake and freeze muffins or little quiches? They could be warmed up very quickly.

Fruit Salad (make ahead and then dip into portions for portability)

Sweet peppers and carrots dipped in hummus

Matzha crackers with hummus and olives on the side



venison or beef jerky


I love to take a tortilla (I do grain free from Tortilla Factory), slather it in guacamole add a piece of turkey or anchovies with Adobo (they're really really good for you:shifty), salsa and lettuce and roll it up, so good and that keeps me satisfied!

I used to really enjoy a few spoonfuls of ricotta with frozen raspberries. The raspberries can be crunched right down without waiting for them to defrost, and they're a brighter flavor than most snacks.

Sometimes ricotta or cottage cheese with a sprinkling of cilantro or dried kelp hit the spot when I wanted something more savory.

Thank you for the ideas!

I do like beans! Been working on finding a yogurt I like that does not have lots of sugar or fake ingredients. I used to buy a container of Stonyfield plain and one vanilla and mix them half and half, maybe I'll do that again.

I do LOVE a PB banana smoothie!

I feel like I eat too much PB (even if it is natural) and too much choc. milk (even if it is local and more natural).

I don't *need* to lose weight but could lose 10#, I think my BMI is 24 (highest normal), so been trying to not eat too much bread, I love bread!

For a tortilla pizza you just use the tortilla as the crust and put sauce and cheese and whatever and heat it up? I buy the tortillas you have to cook with only 5 ingredients.

I cannot make a good blueberry muffin, but do make good banana and pumpkin muffins! When I make them we gobble them up in 2 days!

I had a recipe for blueberry muffins from either Miserly Moms or the Tightwad Gazette. The key was a few extra steps to hold the blueberries up. One was whipping up extra egg whites to fold into the batter. I think there might have also been a suggestion to dust the blueberries with the dry ingredients before folding them in. Alton Brown's Good Eats or America's Test Kitchen might have also had episodes. If you google all those, at least one of the four should have the trick posted online.

What yogurt do you like? I prefer really thick Greek style I found a SKYR yogurt just before Christmas that was on a b1g1 sale at Publix. Well, lets just say, I found something that I dearly love! It is $1.79 a little carton which is a little too rich for my pocket book.

I found a youtube video to understand SKYR yogurt making from Europe and how healthy it is and how they made it. (I am a sucker for documentaries on youtube. LOL) Then I found an instructional video on youtube (See? LOL Youtube again to the rescue) I followed her simple cooking instructions for yogurt in the Instant Pot. We have to use grassfed milk for my husband, so I bought 1/2 gallon extra and bought a carton of the Skyr as my starter yogurt. (Plain) Now I just save a little of my cooked yogurt to make a new batch in the Instant pot. We can flavor it with maple syrup (to me it reminds me of cheesecake) or cocoa for chocolate, or plain as a sour cream replacement.

I bought a Euro bowl (fine mesh strainer bowl with lid that catches the whey that I feed to our pets and add to foods I bake) It makes it drip pretty dry to a cream cheese type consistancy.

I had a bowl of it for breakfast with a handful of flakes and walnuts with maple syrup to sweeten it. It was delicious. (I make it 1 gallon at a time now and it lasts us about 2 weeks because I eat yogurt every day to get the milk intake.)

America's Test Kitchen (Cook's Illustrated) has a whole lot of good recipes including paleo and whole wheat. I'm not sure what you can access without a membership though.

Alton's recipes are usually quite reliable, as are those from Melissa D'Arabian. (But I'm not sure she has a blueberry muffin recipe on the site.)

Blueberries usually sink to the bottom, so you need to strengthen the batter to support them until it starts to set in the oven. You can whip egg whites to create a more stable foam, or you can thicken the batter by melting the butter and using yogurt or sour cream instead of milk.

And Oikos Triple Zero tastes okay (for commercial blended yogurts). It's sweetened with a stevia blend and fat free so it's low calorie. Skyr and all those European yogurts are so yummy! (But about twice the calories and the price.) My dh usually buys the 3 lb tub of plain Greek yogurt from Costco and when I'm not baking with it, we add flavoring to that. It's easy to control the sugar that way.

Also, Chia pudding can be made super simply by mixing a can of coconut milk with 1/3 cup chia seeds in a mason jar. Shake it up and let it sit in the fridge for a couple of hours. Doesn't need much sweetener, but honey is lovely on it. (My dh is a beekeeper so we usually have some from the backyard.)

I was liking a protein yogurt from Aldi but it tastes a little funny because it's sweetened with Stevia maybe? I like it okay.

I'll try some others.

I do have a whole wheat flour blueberry 'cake' I love, I make it in an 8x8 pan. I've never tried it in muffin form. But when I make it I eat it and eat it (maybe I should freeze some). Cookies and muffins are my downfall. :giggle

That sounds delicious...I'd love the recipe if it's shareable. Cakes take less time to make (pouring and such) than muffins, so that's actually a plus.

When I do 8"x8" stuff, we have three of those pans, so I usually triple recipes in my largest bowl, and then cut things into squares to freeze. Squares of cake, slices of quick breads, and muffins freeze really well, and then taste so good reheated in the microwave or toaster. Or cold if you throw a bag in the fridge to defrost. Some recipes fit in the larger pans (11"x7" maybe?) when doubled, though sometimes that messes with the depth too much. Anyhow, that's my strategy for stuff I want on hand but scarf down quickly...biggest batch possible and freeze in gallon baggies.

I think Aldi might be where I bought some yogurt that was specifically marketed as less sweetened, but I'm not sure. I've tried two brands...one that was too unsweetened, and one that was stevia-sweetened. I honestly can't stand any of those low-calorie sweeteners even it they're natural. I usually end up buying a tub of plain and a tub of vanilla from the Aldi's brand Greek yogurt...vanilla I'll eat by itself or with granola or something, and plain I'll use as sour cream or throw something sweet like berries on it, or occasionally mix them.
