We had Garlic basil chicken with tomato butter sauce over gf penne, and kale caesar salad. The tomato butter sauce never thickened up and was quite bland. :scratch

Dh is oot for work so Im going to pick up Jimmy Johns. Then dd and I can eat early before I drive to her PV practice and ds can have his when he gets home from soccer and we are gone.

Tonight, I found this recipe. One of the things I miss most often due to my food allergies is oatmeal. Trying to find substitutes is hard sometimes. I had some leftover pumpkin in the fridge - I had made some gf pumpkin muffins the other day. I think we might have chicken tortea soup. I had it planed for yesterday when I have been looking at the weather on Saturday. But yeaterday it was still nearly 80 at dinner time and not soup weather at all

We had egg roll in a bowl and wonton soup on Friday.

Sauteed onions, potatoes, and cabbage on Saturday.

Mozzarella stuffed meatloaf, mashed potatoes and green beans on Sunday.

The coconut curry was surprisingly good! Three of my four kids ate it. :jump2 (Littlest doesn't eat anything. Unless it's ice cream. Or mashed potatoes. :sigh)

I subbed frozen cauliflower for the broccoli, because I just can't stand overcooked broccoli, which I was sure was going to happen in a crock pot for that long. And I also added a little (1t) of curry powder. Dh added hot chiles (I think they were Thai chiles from the garden) to his bowl. We're out of sriracha, which I would have used. Next time!

We had a simple veggie chicken stir fry tonight served over raw julienne cut zucchini noodles.

Tomorrow I Plan to make coconut chicken curry. I need to remember to thaw some chicken tonight tho.

Tonight is meatball pasta bake as DS #1 will be at work and it's easy for him to reheat when he gets home.

Tomorrow will be a chicken and veggie slow cooker.

We were supposed to be out all day so I put Cheesy (Ranch) chicken in the crockpot. I've got sauteed broccoli for those that eat it and peas for the rest as veggies. Our afternoon classes were cancelled, and since I was home...... I made snacks. :shifty (Butterscotch pudding and Cheerios marshmallow treats.) I may have a problem. :bag

Chicken enchiladas was on the menu, but I am tired so I am just doing Chicken Enchilada Casserole instead. :)
And a simple green salad, and some instant pot Mexican rice.

Tonight I had quinoa with caramelized onions, chickpeas and sauteed summer squash left from yesterday's lunch. It came out really nice and I'm kind of proud because I just threw it together without a recipe or anything.

We had enchilada casserole, instead of enchiladas on Tuesday too! Only I did beef. Sides were sauteed potatoes and onions and pinto beans.

Mon - Creamy Chicken Noodle soup

Wed - refried beans, bacon, egg tacos

Thurs - Chicken alfredo and pasta, roasted broccoli, caesar salad

Tonight I may make a sheet pan shrimp and veggie dish, or we might have a date night and the kids can eat leftovers.

I'm making Chinese Rice Paper Wrapped Fish tonight with Tilapia. Fingers crossed they'll eat it! My kids don't really like lettuces (except for cabbage, go figure) but they'll eat chopped salads made from all the other typical salad veggies, so I've got a cucumber-sesame salad and a pepper salad with lemon ginger dressing on the side.
