Meals in May
 
Today was pizza from the freezer and salad with lettuce from my little garden. It is so satisfying and amazing to eat food that grew from seeds I planted!

What an awesome thing your garden is!

I had salad and a smoothie, and I fed my Dad chicken noodle soup that I made for him the other day.

We had lentil taco salads last night

Not sure about today since there's plenty leftover but I had planned a sausage, potato, cabbage dish.

Tonight I made pho. I thought it was really excellent but everyone was tired and grumpy at dinner so I don't think anyone appreciated it.

I need a plan for tonight. Co-op was cancelled due to covid so class is online. Sigh. But, I’ll be home and able to make dinner. Maybe tacos.

Last night, I ended up doing migas and Kodiak cakes because we were out of sausage.

I'll probably do a sheet pan chicken thing tonight. I need to thaw out a pork roast for pulled pork later this week

I love pho! We buy a side of beef every year and I save the oxtail and the small tenderloin for pho. So yummy!

We're having schnitzel tonight. I think. I have a pork loin. Littlest asked for pork chops, too. Either one is possible. Steamed broccoli on the side.

I don't get pho. :shifty

I had it at a restaurant once because everyone raves about it. But it was just a difficult to eat broth soup. It tasted fine but I just don't get the rave.

Monday we had lemon ricotta pasta. Tuesday was gf biscuits and sausage gravy with strawberries on the side. Wednesday was General Tso's chicken over rice with broccoli on the side. Tonight I'm planning some kind of baked fish, baked potatoes with whipped feta, and green beans. Tomorrow night will be blue cheese burgers and oven fries.

I'm going to make a new recipe for Parmesan chicken. Haven't decided on sides yet but probably rice or quinoa and either spinach or green beans

The chicken I made was really good!

2 lbs chicken tenders, salted and peppered
1 cup mayonnaise
1/2 cup freshly grated parmesan
1 tbsp Italian seasoning
1 tsp garlic powder

I just mixed it all together in a baking dish and baked at 425 for about 20 minutes. It was so good. Went very well with quinoa and spinach

Meals in May
 
Decided on garlic lime chicken tonight. Sides of roasted broccoli and tater tots.

I bet the whipped feta would be good with this. I don’t have any cream cheese. Next time for sure.

I have no idea what to make today. I'm going to a friend's house for wine and cheese late afternoon. It'll be time for dinner when I get home so maybe just microwave nachos or something [emoji38]

This morning I stopped by the grocery store and they had a lot of good meat on clearance. So today I made pulled pork to have tomorrow ( it will be better after cooling and reheated) and then I made chicken fried stake for dinner.

Meals in May
 
We had a gathering of friends for dd17’s birthday this afternoon. Dh grilled burgers for our family and one other that stayed a little later.

Not sure what tomorrow’s dinner will be, but dh has said he will cook. :tu

Yes!

It was originally for a slow cooker for all day with some more liquid but I do it in my pressure cooker for an hour or so.

3-3.5 lb bone in pork well marbled

Score the meat with a knife, stab down in to the thick portions

Mix together ( I end up.usinf these as rough proportions and not really measuring thing much):
2T Oil ( I use olive)
1T Salt
4 cloves of Garlic minced
2t Cumin
1t Oregano

Rub the spice mixture all over the meat, try to fill in the holes you created earlyer.

Put in to pot along with

Juice of one lime
Juice of one orange
0.25c water

I haven't used a slow cooker in more than a decade I think you would need to add some more liquid.

In a pressure cooker if you are only doing 3lb and hour is great. If you get up close to 10lb of solid pork butt/ shoulder it needs two hours.

Oh thank you! This sounds perfect! I was stressing about getting it in the Crock-Pot today but I'll just do the instant pot. I'll have to do a different juice since dh is allergic to oranges. I might just do more lime

I think that would be just fine. When I reheat the pork I normally add more lime juice.

You don't have any problem getting it up to pressure? (I thought you needed at least 1 cup of liquid.)

I don't normally do it in my instapot because I am doing larger cuts, so I don't know of that would affect things.

With the citrus juice I have more than a cup of liquid.
