It's just vegetables layered and baked like a casserole. I found a recipe years ago in the Beans and Rice volume of an old(ish) set of Williams Sonoma cookbooks. This particular recipe has eggplant and adzuki beans topped with tomatoes and parmesan cheese and baked in the oven. I left out the beans this time, added zucchini, and topped it with ricotta cheese. Zucchini or yellow squash (especially in the summer) work really well. When we have big, beautiful tomatoes from the garden, I layer it like this one.
