You could also do a riff on Red Beans and Rice. With the Italian Sausage, I'd be tempted to use cannelini beans or another white bean. You'd need onion and garlic, some thyme, and a can of tomatoes.

I ended up making dirty rice. I didn't have green pepper but I had one zucchini left so used it instead. I think Minestrone would have been really good though. Next time!
