Creamy wild rice soup
I know awhile back someone posted about a delicious creamy wild rice soup (I think with chicken and maybe mushrooms) in one of the dinner threads. I can't seem to find the recipe.

It is SO good! I've made it a lot and guests rave about it.
I've also used milk instead of cream, or part milk and part cream and it was just as good. I add the cooked wild rice at the end. I substitute herbes de Provence for the rubbed sage and I add garlic. Last edited by Soliloquy; 04-15-2019 at 09:57 PM. Reason: clarity |

Why do you cook the rice first? Can't you just cook it in the soup?

The recipe calls for cooked wild rice, added at the beginning. I cook the wild rice in my Instant Pot during the day, using the timer delay, so it's done about the same time as the soup, then I add it.
You could add raw wild rice to the soup but you'd need to add quite a bit more broth. It absorbs about 3x its volume in liquid, usually, and takes over 60 minutes to cook simmering on the stove, about 35 minutes in a pressure cooker. I'm not sure how long it would take in a slow cooker. It's possible it might not even be done after 8 hours on low. |
