June Dinners
Hello all, I guess we missed May. Are you making anything fun for summer dinners? Please share here.
We're mowing today so having frozen gf waffles, sausage, and blueberries. Not so much a summer meal, but it works on mowing day because not much prep.

It has become a summer tradition for me to make loaded salads, Cobb style. I use a large shallow dish (a 9"x13" glass baking dish works well, but sometimes I use prettier options). First I put down a layer of greens and then make rows of whatever toppings I have in the fridge. Regular topping options include leftover chicken or turkey (cubed), crumbled feta, grated cheese, rinsed frozen corn, black beans or chickpeas (about half a can, usually), cubed cucumber, diced tomatoes, sliced eggs, crispy tofu, diced cooked beets...basically 4-6 things that I can find quick. If there is enough protein on the salad that will sometimes be a meal on its own with some kind of bread on the side. I like putting the toppings in rows so it is easy for people to avoid things they don't like, and also so every bite doesn't taste the same like many mixed salads do.

We had a salad from the garden and beef stew from the freezer tonight. It was a bit chilly today, especially for June - only mid-60's but rainy - which called for something warm and comforting.

Last night was gf pasta with browned butter and myzithra for dh’s birthday. I also made strawberry rhubarb crust less pie.

We have a Birthday today. Birthday kid wants schnitzel, mashed potatoes, and kale chips with ice cream sundaes in lieu of Birthday cake.

I picked lettuce and spinach from our garden recently and also herbs from my garden (cilantro, parsley, dill and chives) and mixed it all together. It made a really awesome side salad with a little homemade ranch. We had it with blue cheese burgers and sweet potato fries.
Last night we had homemade pizza. Tonight we are having company and I'm making black bean soup, kale apple salad, and zucchini brownies with raspberries and mint.

My frittata turned into scramble. I didn’t have time to bake it. I sautéed onions, peppers and aidells chicken-apple kielbasa. Then I scrambled a bunch of eggs and mixed everything together. It was yummy. Served with shredded cheese and avocado.

Reading about Kielbasa reminded me of something. I would like to make Jambalaya, and used to be able to find Andouille sausage at Trader Joes. I haven't seen it there recently so I wonder if there are any other grocery chains (in Washington State, if that makes a difference), that regularly carry Andouille.

We had lasagna tonight, as per Secunda's request. Italian sausages and a salad on the side.
I used homemade sauce but cheated a bit and used boxed no-boil noodles.

Each child has a turn making suppers, so that's nice.
We have had sub sandwiches, lasagna, homemade pizza, empanadas, breakfast for supper, and other things I can't think of right now.

I'm jealous that you're already getting beans from your garden! So far we've gotten lots of lettuce and a couple of small peppers, but nothing else.
I tried a recipe for Greek Baked Feta from Cook's Illustrated the other night and it was delicious! It's just a block of feta place on a bed of chopped green peppers and tomatoes tossed in olive oil, with sliced tomatoes and hot pepper rings on top, drizzled with a little more evoo. Half an hour in the oven (350) then it's finished under the broiler and served with crusty bread. Costco occasionally has an Israeli feta sold in brine that is so wonderfully creamy with the perfect amount of tang. They had it this week, so DH picked it up. I may have to make whipped feta later this wee with the other block. Saturday night is usually Scrounge Night (leftovers!) but I may make enchiladas instead.
