Tuscan Kale and Chickpea Soup
Since I got a huge bunch on lacinato kale in my CSA box, I decided to make a big pot of soup with some to freeze for next week.
Here are the ingredients I used: Large can crushed tomatoes Quart of chicken stock 1 celery stalk 1 onion 4 garlic cloves large bunch kale, ribs removed 3 large carrots soaked chickpeas (I have a pound soaking but won't use them all) 1 tbsp fresh rosemary 1 tbsp each of dried oregano and basil I diced up the onion, garlic, kale, celery and carrots and softened them in my pot with olive oil. Then I added the remainder of the ingredient. I will probably adjust the seasoning after it simmers for a while. Since I used low salt store bought chicken broth, I didn't add any salt to the soup. I may serve it with elbow macaroni.
