Vegan meringue?
Since we are egg free I've been doing a lot of vegan baking. Has anyone ever attempted vegan meringue? I've found some recipes that's LOOK good. But they are made with chickpea liquid

I've not been brave enough to try the meringue, but we do use an aquafaba mayo that's very good.

I have seen that recipe as well and has been interested in it, but haven't tried it.

It's pretty yummy but IME it doesn't hold up well- it goes back to being liquid pretty quickly. I'm not sure if I'm doing something wrong, though.
